Blending of Cognac
The central person in blending cognac is the Cellar Master or Master Blender. It’s the Master Blender that mixes the different eau-de-vie into the final cognac. Blending is a work that requires widespread experience and it is the process where each cognac producer has a final influence of the quality of the cognac. By blending eaux-de-vie of different ages (single estates) or eaux-de-vie of different ages and from different crus the cognac trading houses, creates the unique taste of the house or range. From a commercial perspective the Master Blender need to ensure a consistent quality and taste to the consumers worldwide.
In his work the Master Blender follows and monitors the different eaux-de-vie from the moment they come out of the pot stills and through the aging process where they are regularly tasted and decision made with regards to oak cask and warehouse location. It is also his decision to when and how to dilute the eau-de-vie with distilled water.
